Cleaning and skinning trout with a pair of scissors. It's best to clean the trout shortly after catching. The technique is the same for salmon. I've tried this method for bass, shad, and panfish (brim), but have found that this method works best for trout. These trout were caught at Boca Reservoir near Truckee, CA on 12/06/08. Ingredients 6 oranges, sliced 1 onion, sliced 1 tbsp of ground coriander 1 tbsp of salt 1 tbsp of black pepper 4 rib racks, 1 lb each 2 cups of orange juice Instructions 1. In a roasting pan, form a bed of orange and onion slices. 2. Mix the coriander, salt and black pepper in a small bowl. Coat the ribs with this mixture, evenly on both sides. 3. Lay the seasoned ribs on the orange bed and pour the orange juice over them. Cover with tin foil. 4. Place the pan with the ribs on a grill at low, indirect heat for about an hour or until fork tender. Remove from the grill. 5. Heat the grill to medium and place the partially cooked ribs directly on the rack. 6. Cover and cook, turning once, until they're browned-about 8-10 minutes. Brush with our classic bbq sauce and continue cooking for 6-10 minutes. 7. Remove from the grill and serve. 2008-05-27T18:41:37.000Z

Ingredients 1 cedar plank 1 tbsp of extra virgin olive oil salmon filets salt and pepper, to taste 1/2 cup of carrots, diced 1/2 cup of yellow onion, diced 1/4 cup of celery, diced 1 tbsp of tomato paste 1 cup of zinfandel wine 2 cans of beef broth 1 bay leaf 1 bouquet garni, thyme and parsley 1 cup blueberries Instructions 1. Soak the cedar plank for at least 4 hours or overnight. 2. Brush the cedar plank with olive oil and lay the fish on. Check for pin bones and then season with salt and pepper. 3. Preheat the grill to medium high. 4. Place the cedar plank on the grill and cook covered for 10-20 minutes. 5. To prepare the blueberry zinfandel sauce, begin by heating olive oil in a large pot. 6. Add carrtos and onions to the pan, and saute until golden brown, 11-12 minutes. 7. Next, add celery and saute for 8 minutes. 8. Add the tomato paste and cook until the mixture is a rust color, about 4 minutes. 9. Deglaze the pan with red wine and simmer until reduced by half. 10. Next, add the beef broth, bay leaf, and a bouquet garni and simmer until the sauce is thick enough to coat a spoon. 11. If the sauce is too thin, make a paste with equal parts of butter and flour. 12. Add the blueberries and season with salt and pepper. 13. Ingredients 2 whole sea bass, cleaned and scaled 3 tbsp of olive oil 1 tbsp of fresh oregano, chopped 2 lemons, zested, juiced and sliced 1 tsp of ground coriander salt, to taste 1/4 tsp of ground black pepper 2 large oregano sprigs Instructions 1. Heat the grill to medium heat. 2. In a small bowl, combine olive oil, chopped oregano, zest from 1 lemon and the juice from half of a lemon, ground coriander, and salt then mix. 3. With kitchen shears cut away all the fins on the top, bottom and sides of the sea bass. Then cut 3 diagonal slashes on both sides and season with salt and pepper. 4. Place lemon slices and oregano sprigs inside the fish cavity and then place in a baking dish. 5. Coat the fish with the marinade and let stand for 15 minutes. 6. Coat the grill with olive oil to make sure the fish doesn't stick. 7. Place on the grill for 12-14 minutes or until opaque. 8. Serve with olive oil and lemon wedges. 2008-05-27T19:15:21.000Z

Then she takes them home and shows you how to scale, head, and gut, them. Once they are cleaned she shows you her favorite way to cook them. That would be to coat them with corn meal and deep fry them. She also show off her pet rooster (Gumbo) and her cat (Big Boy).
