This homemade soup is to die for. My youngest son always looked forward to the day AFTER Thanksgiving - anticipating this turkey recipe. Written recipe follows. Recipe: Broth from turkey water for pot 3 14 ounch cans chicken broth (approx) for reconstituting. I prefer adding chicken broth rather than more water - (about 3 1/2 C or as needed) 1 lbs turkey (approx) meat from turkey carcass 1 C ea (I actually "eyeball it") of diced green onions, minced carrots, & diced mushrooms 1 C cream or half-n-half (or milk, etc) 2 large dollops of sour cream SW Spice (or chili powder, chipolte') and salt & pepper to taste Directions: Add water to large pot and add turkey carcass (bones and all) to pot. Simmer until meat falls from bone and broth forms. Cool to handle. Debone remaining meat from turkey. Return turkey broth deboned meat to stove and continue simmering adding chicken broth to reconstitute. Add vegetables and spices. Spoon in cream and sour cream. Simmer until tender and stir to combine. Before serving, add homemade noodles (see below) and cook 3 minutes more. Transfer the bird to your largest cutting surface. 3. With a sharp, thin-bladed carving knife, find the place where the thighbone meets the body. By cutting between the joints, and not through bones, you can disconnect the bones without much fuss. 4. Pull the thigh away from the bird and slip your knife into the joint to separate the thigh from the body. 5. Wiggle the drumstick to locate the joint that separates the drumstick from the thigh. Using the same technique, cut through the joint, not the bone. 6. Next use your knife to find where the wing and body connect. Slip your knife into the joint to separate wing from body on each side. 7. Now remove the breast by cutting down the center of the bird on one side of the bone. The breast will come off in one piece. 8. Carve the breast into thin slices. 9. Repeat with the other side of the breast. After your turkey is carved, arrange the pieces on a platter and serve.

Ingredients 1 bell pepper, chopped 2 cloves of garlic, minced 2 large onions, chopped extra virgin olive oil 2 tbsp chili powder 1 tsp ground cumin 1/2 tsp oregano 1/2 tsp ground cinnamon 1 can of chicken stock 1/2 can of tomato paste 1 can of pureed tomatoes 1 cup of beans, drained and rinsed Instructions 1. Saute bell pepper, garlic, and onion in extra virgin olive oil. 2. Season with chili powder, ground cumin, oregano and ground cinnamon. 3. Add chicken stock, tomato paste and pureed tomatoes. 4. Cook covered for 15 minutes. 5. Pull apart as much leftover turkey as you would like and add the meat to the sauce. 6. Add the beans to the sauce and cover loosely. 7. Simmer the chili for 45 minutes to 1 hour.

Ingredients 1 lb gruyere 1 lb emmentaler 2 tbsp flour 2 loaves crusty French bread 1 clove garlic 1 cup of white wine 1 cup kirsch 1 tbsp lemon juice 2 tbsp nutmeg 2 tbsp white pepper raw vegetables Instructions 1. Cut the gruyere and emmenthal cheese to fit in a food processor. 2. Shred the cheeses in a food processor with the shred tool attached. 3. To the cheese add 1 tablespoon of flour and stir. 4. Step-by-step guide to roasting turkey: 1. Add onions, celery and carrots to bottom of roasting pan, and then sprinkle a few sprigs of thyme over the vegetables. (You could put a rack on the bottom of the turkey, but we like to use different vegetable and herbal aromatics as a base for the turkey. It also adds flavor to the broth that is made by adding water to produce a great sauce or jus.) 2. Place the turkey on top of the vegetables. 3. Truss the turkey by wrapping the string around the back, crisscrossing and wrapping it twice around the legs, and then tying it under the neck. 4. Tuck the wings under the body of the turkey. One of America's favorite comfort foods, potato soup is served everywhere from steakhouses to country diners. Hi, I'm chef Jason Hill of Chef Tips and today we're making a creamy potato soup recipe that's dressed up with smoked gouda cheese. If you can't find smoked gouda, a steakhouse secret to that creamy texture is a processed cheese such as Velveeta. Creamy Potato Cheese Soup 1 tablespoon dried basil 1/2 stick (4 tablespoons) butter 2 cups shredded smoked Gouda cheese 6 small red potatoes, diced and reserved in cold water to prevent browning 2 diced carrots 2 diced celery stalks 1 white onion, diced 1 teaspoon garlic-shallot puree (or 2 cloves garlic, crushed) 2 cups heavy cream 6 cups chicken broth Turn stock pot on medium high. Melt butter. Add celery, onion, carrots. Cook down until onions are transluscent. Add basil and garlic-shallot puree. After 3 minutes, add potatoes and stir another 3 minutes. Carefully pour in 6 cups chicken broth. Boil for 20 minutes, then stir in a roux made from 4 tablespoons flour and 4 tablespoons butter. Wait a few minutes for the soup to thicken slightly. Add cream. Whisk and simmer for 20 minutes. Slowly stir in cheese and melt it down. After cheese is melted, pour into bowls and season with salt and fresh cracked pepper.
