How-to make Potato Latkes. This is a simple recipe you can cook for a side dish to dinner or brunch any day of the week. Ingredients 2 lbs of potatoes 1 large onion 1/4 cup of flour 1 egg, lightly beaten 3/4 tsp of salt 3/4 tsp of pepper 1/3 cup of extra virgin olive oil 1/2 cup of sour cream, optional 1/2 cup of applesauce, optional Instructions 1. Using a food processor, grate potatoes and onion into a large mixing bowl. 2. Squeeze the mixture tightly between your hands to release excess water and return the potatoes and onion to a bowl. 3. To the potato mixture add the flour, egg, salt and pepper and stir to combine. 4. Next, in a large heavy skillet, heat the extra virgin olive oil over medium heat. 5. Using your hands or a spoon, put about 2 tablespoons per pancake into the skillet. 6. Cook each pancake for 4 minutes, then flip and cook for another 2 minutes or until golden brown, crisp and cooked through. Serve with sour cream and applesauce if desired.

How-to make Swedish Meatballs. This is a simple recipe you can cook as an appetizer for any gathering. Ingredients 1/3 cup of plain breadcrumbs 1/3 cup of milk 1 small yellow onion, finely diced 1 egg (or egg white) 1 1/3 lbs lean ground beef 1/2 tsp of salt 1/8 tsp of pepper 1/4 tsp of allspice 2 tbsp of butter 1 tbsp of flour 1 tbsp of extra virgin olive oil Instructions 1. Soak breadcrumbs in milk for 5-10 minutes until the liquid is absorbed. 2. To a bowl, add onion, egg, ground beef, soaked bread crumbs, allspice, salt and pepper. 3. Mix all the ingredients together with your hands and shape the meat mixture into small balls, less than 1 inch in diameter. If the mixture starts to sticks to your hands, wet them with cold water. 4. Heat a skillet with butter and extra virgin olive oil. 5. Saute the meatballs in 2 or 3 batches, turning them frequently to keep from sticking. Drain them on paper towels. 6. Drain the excess olive oil and scrape off and discard any browned bits of meat that may be sticking to pan after the meatballs are done. 7. To the same pan, add butter and flour to make a roux and stir until it browns. 8. Quickly add a can of beef stock and bring to a boil, stirring constantly until gravy thickens. 9. Remove from the heat and serve immediately with the meatballs. For real swedish meatballs, use lingonberry preserves, but it is optional.

Ingredients: 3 eggs 1 tablespoon mayo 1 ounce diced chived 2 pinches of curry powder 1) Boil then simmer the eggs for 15 minutes in a pot with water leveled to the top. 2) Carefully scoop out the eggs and add into an ice water bath. 3) When the eggs are cooled down, crack and peel the shell of the eggs. Cut lengthwise 4) Scoop out the egg yolks and add them into the bowl with the diced chives. 4) Sprinkle curry powder and add the mayo into the mixture. Mash together thoroughly. 5) Fill the eggs with the yolk filling Serve!

Soak the toothpicks in water for about 30 minutes, so they don't burn on the grill. 2. Par boil the bacon strips for about 3 minutes and set aside. 3. Wrap a piece of blanched bacon around each scallop and thread with a toothpick to keep together. Transfer the wrapped scallops onto a plate. 4. Sprinkle the scallops with sage and drizzle with the olive oil and lemon juice. 5. Grill the scallops for 2-3 minutes per side over a medium hot fire. 6. Remove the scallops from the grill and serve hot with lemon wedges.

This is my lowfat -NO YOLK- deviled egg recipe. They are so good and great for a ready to eat snack in the fridge. The cottage cheese picks up the flavors nicely, and is a great substitute to yolks! I hope you try them!

Step 2: Boil With the burner on high, bring the water to a boil and let the eggs boil for seven minutes. Tip: For soft-boiled eggs, boil the eggs for four minutes instead of seven. Step 3: Prepare an ice bath About five minutes after the eggs have been cooking at a boil, put a tray of ice cubes into a bowl of cold water. Step 4: Submerge eggs in bath Once the eggs are finished, remove them with a slotted spoon and put them in the ice water. Tip: Don't overcook the eggs or else you'll get a green ring around the yolk, which will become chalky, and the whites will have a rubbery consistency.
