How to make Caribbean grilled shrimp and pineapple skewers. Ingredients skewers 1/2 cup of lime juice 4 garlic cloves 2 tbsp of achiote seeds, or equal parts turmeric and paprika 2 tsp of allspice berries 2 tsp of dried oregano 2 tsp of salt 1 1/2 tsp of whole black peppercorns 1/2 cup of extra virgin olive oil 1 pineapple, peeled, cored, and chopped into 1/2 in thick slices 2 onions, cut into 1/2 in. wedges 3 sprigs of fresh oregano 1 lb of shrimp 1 lemon, cut into wedges Instructions 1. Soak the skewers in cool water for 30 minutes. 2. Blend the lime juice, garlic, achiote seeds, allspice berries, oregano, salt and peppercorns in a blender until smooth. 3. Gradually add the olive oil to the mixture as the blender is running to create an emulsion. 4. Assemble the skewers with 3 shrimp, 3 pineapple wedges, and 2 onion pieces and transfer to a shallow pan. 5. Add three sprigs of fresh oregano to the pan of skewers once they are finished being assembled. Pour the achiote paste over the skewers evenly and marinate for 1-3 hours. 6. Prepare a charcoal grill to high heat. 7. Place the skewers on the grill and cook about 3-4 minutes a side. 8. Serve with a squeeze of lemon. 2008-05-27T19:53:16.000Z

www.lightscameracook.com Recipe: Serves 4 1 Pound Wild American Shrimp, peeled and deveined 2 Tablespoon olive oil, separated Old Bay® seasoning to taste 1/4 cup Sterling Vintners Collection® chardonnay wine 2 tablespoons butter 1 dash hot sauce 1 tablespoon chopped parsley 1.Heat a large non-stick skillet over med-high heat for one minute. In the mean time place the shrimp, one tablespoon olive oil and seasoning in a bowl and toss to coat. 2.Add one tablespoon of the oil to the hot pan and swirl to coat. Add the seasoned shrimp and sauté for two minutes. Remove the cooked shrimp from the pan and set aside. 3.Add the wine to the same skillet and return to the medium high heat. Simmer the wine until only about one tablespoon remains. Remove the pan from the heat and add the butter, hot sauce and parsley. Use a whish to swirl the butter around the pan until melted. Cover the chicken with the marinade and cover and refrigerate for 1-2 hours. 4. Heat the grill to medium heat. 5. Heat the olive oil over medium heat in a 5-6 quart stockpot until hot. 2. Add the ginger and onion and cook until the onion is golden and tender, about 10 minutes. 3. Add the chili powder and cook, stirring, for about 1 minute. 4. Add the garlic and pineapple and cook for 1 minute longer. 5. Remove from the heat and stir in the crushed tomatoes, ketchup, cider vinegar, brown sugar, molasses, dry mustard, and salt. 6. Puree the sauce with an immersion blender until smooth. 7. Return the saucepot to the heat and bring to a boil over high. Soak the toothpicks in water for about 30 minutes, so they don't burn on the grill. 2. Par boil the bacon strips for about 3 minutes and set aside. 3. Wrap a piece of blanched bacon around each scallop and thread with a toothpick to keep together. Transfer the wrapped scallops onto a plate. 4. Sprinkle the scallops with sage and drizzle with the olive oil and lemon juice. 5. Grill the scallops for 2-3 minutes per side over a medium hot fire. 6.
