To complete this How-To you will need: 2 lb. Idaho russet potatoes, or one 30-ounce bag of frozen shredded potatoes One medium-sized sweet onion, diced Three eggs, lightly beaten 2 tbsp. unbleached, all-purpose flour or matzo meal Salt and pepper to taste Vegetable oil for frying Paper towel-covered baking sheet Sour cream Applesauce Cottage cheese Plain yogurt Step 1: Shred the potatoes Peel the potatoes and then grate them by hand or shred them in a food processor. If you're using frozen shredded potatoes, let them defrost in a bowl. Step 2: Dice the onion Dice the onion by hand or with your food processor. Step 3: Squeeze dry Squeeze the excess water out of the potatoes and onions with paper towels or a clean dish towel. Step 4: Mix with other ingredients In a large bowl, mix the potatoes and onions with the beaten eggs and the flour or matzo meal. Add salt and pepper to taste. Broccoli Salad recipes are delicious and can be nutritious. A real "super food" broccoli is chock full of nutrition, antioxidants and flavor. This recipe is also an easy way to get more vegetables in your diet. I've got to admit, the dressing isn't too healthy - but it is delicious. Try no-fat mayo, light cheese and leave out the bacon for a more healthy option. You can make this salad with raw broccoli or blanch it a bit to hold the color and soften the florets. If you don't like raw broccoli blanch the broccoli for 1 minute or so. But be careful to not leave the broccoli in the water too long. This recipe pairs broccoli, bacon and a dressing to make a sweet and sour salad that's a great side dish or meal all on its own.

How-to make a Turkey Chili. This is a simple recipe you can cook for dinner and it can be made with leftover turkey. Ingredients 1 bell pepper, chopped 2 cloves of garlic, minced 2 large onions, chopped extra virgin olive oil 2 tbsp chili powder 1 tsp ground cumin 1/2 tsp oregano 1/2 tsp ground cinnamon 1 can of chicken stock 1/2 can of tomato paste 1 can of pureed tomatoes 1 cup of beans, drained and rinsed Instructions 1. Saute bell pepper, garlic, and onion in extra virgin olive oil. 2. Season with chili powder, ground cumin, oregano and ground cinnamon. 3. Add chicken stock, tomato paste and pureed tomatoes. 4. Cook covered for 15 minutes. 5. Pull apart as much leftover turkey as you would like and add the meat to the sauce. 6. Add the beans to the sauce and cover loosely. 7. Simmer the chili for 45 minutes to 1 hour.

How-to make Swedish Meatballs. This is a simple recipe you can cook as an appetizer for any gathering. Ingredients 1/3 cup of plain breadcrumbs 1/3 cup of milk 1 small yellow onion, finely diced 1 egg (or egg white) 1 1/3 lbs lean ground beef 1/2 tsp of salt 1/8 tsp of pepper 1/4 tsp of allspice 2 tbsp of butter 1 tbsp of flour 1 tbsp of extra virgin olive oil Instructions 1. Soak breadcrumbs in milk for 5-10 minutes until the liquid is absorbed. 2. To a bowl, add onion, egg, ground beef, soaked bread crumbs, allspice, salt and pepper. 3. Mix all the ingredients together with your hands and shape the meat mixture into small balls, less than 1 inch in diameter. If the mixture starts to sticks to your hands, wet them with cold water. 4. Heat a skillet with butter and extra virgin olive oil. 5. Saute the meatballs in 2 or 3 batches, turning them frequently to keep from sticking. Drain them on paper towels. 6. Drain the excess olive oil and scrape off and discard any browned bits of meat that may be sticking to pan after the meatballs are done. 7. To the same pan, add butter and flour to make a roux and stir until it browns. 8. Quickly add a can of beef stock and bring to a boil, stirring constantly until gravy thickens. 9. Remove from the heat and serve immediately with the meatballs. For real swedish meatballs, use lingonberry preserves, but it is optional.
