Ingredients maine lobsters rock lobster tails lemon wedges, optional Instructions Maine Lobster 1. Drop a live lobster into a large pot of heavily salted water. While the water comes to a boil, cut the rubber bands off the lobster claws. 2. Cook the lobster for about 7 minutes for the first pound and 3 minutes for each pound after. Remove them from the pot and submerge them in an ice bath so they don't overcook and become tough. 3. Make sure that the Lobster's tail is curled (which means it is safe to eat). After the lobster is cool enough to handle, you can start to take it apart. 4. Twist the tail apart from the body. Twist off the claws. Use a nutcracker or knife to release the meat in the claws. To remove the meat from the tail, remove the legs and cut along the underside of the tail with pair of kitchen shears. 5. Use a lobster pick to find extra meat in the legs and body cavity. Rock Lobster Tails 1. Preheat the grill to medium high heat. 2. Place the tails on the grill for about 4 minutes and then turn and cook for about 2 minutes longer. 3. Stand the tails on end and cook for 2 minutes longer. Remove from the grill. 4. Cut the tail end off and cut along the underside with a pair of kitchen shears to release the meat. 5. In a roasting pan, form a bed of orange and onion slices. 2. Mix the coriander, salt and black pepper in a small bowl. Coat the ribs with this mixture, evenly on both sides. 3. Lay the seasoned ribs on the orange bed and pour the orange juice over them. Cover with tin foil. 4. Place the pan with the ribs on a grill at low, indirect heat for about an hour or until fork tender. Remove from the grill. 5. Heat the grill to medium and place the partially cooked ribs directly on the rack. 6. Cover and cook, turning once, until they're browned-about 8-10 minutes. Ingredients 1 chicken Secret BBQ Sauce Recipe Instructions 1. Place the chicken breast side up, and remove the legs, cutting between the thigh and body. Bend the thigh back and twist to break the hip joint and cut through the joint. 2. To separate the drumstick from the thigh, place the skin side down and cut through the joint. 3. To remove the wing, pull away from the body and cut between the joint and breast. Then remove the wing tips, these can be frozen and used in a chicken stock. 4. Using kitchen shears, cut the rib cage along one side from the tail end to the neck and then repeat on the other side and remove the backbone in one piece. 5. With the skin side down, press the knife on the breast to remove and then trim away any fat. 6. Preheat the grill to medium heat. 7. Place the chicken on the grill and cook for about 20 minutes, turing once. 8. Generously brush the chicken with our recipe for BBQ sauce and continue cooking for about 20-25 minutes.
