To prepare the blue-cheese dipping sauce: add the sour cream, blue cheese, mayonnaise, green onion, 2 tbsp of the cider vinegar, worcestershire sauce, and salt to a bowl and stir. 2. Preheat the grill to medium heat. 3. Separate the chicken wings at the joint and remove the tips, then add to a bowl. 4. Coat the wings with extra virgin olive oil and season with salt. 5. Place on the grill and cook for about 30 minutes. 6. To make the buffalo sauce, add melted butter, hot sauce, 1 1/2 tbsp of cider vinegar and salt to a bowl and mix. 7. Blend until the ingredients are well combined, about 30 seconds. 2. In a large bowl, add the chicken and season with salt and pepper. 3. Cover the chicken with the marinade and cover and refrigerate for 1-2 hours. 4. Heat the grill to medium heat. 5. Instructions 1 tbsp of extra virgin olive oil 2 tbsp of ginger, peeled and chopped 1 large onion, chopped 3 tbsp of chili powder 3 garlic cloves, minced 1 8 oz can of crushed pineapple with its juice 1 28 oz can of tomatoes with their puree, crushed 1/3 cup of ketchup 1/4 cup of cider vinegar 3 tbsp of dark brown sugar 3 tbsp of light molasses 2 tsp of dry mustard 1 tsp of salt Instructions 1. Heat the olive oil over medium heat in a 5-6 quart stockpot until hot. 2. Add the ginger and onion and cook until the onion is golden and tender, about 10 minutes. 3. Add the chili powder and cook, stirring, for about 1 minute. 4. Add the garlic and pineapple and cook for 1 minute longer. 5. Remove from the heat and stir in the crushed tomatoes, ketchup, cider vinegar, brown sugar, molasses, dry mustard, and salt. 6. Puree the sauce with an immersion blender until smooth. 7. Return the saucepot to the heat and bring to a boil over high. Reduce the heat to medium-low and cook, stirring occasionally, until the sauce reduces to about 5 cups-about 25 minutes.

Ingredients 1 chicken Secret BBQ Sauce Recipe Instructions 1. Place the chicken breast side up, and remove the legs, cutting between the thigh and body. Bend the thigh back and twist to break the hip joint and cut through the joint. 2. To separate the drumstick from the thigh, place the skin side down and cut through the joint. 3. To remove the wing, pull away from the body and cut between the joint and breast. Then remove the wing tips, these can be frozen and used in a chicken stock. 4. Using kitchen shears, cut the rib cage along one side from the tail end to the neck and then repeat on the other side and remove the backbone in one piece. 5. With the skin side down, press the knife on the breast to remove and then trim away any fat. 6. Preheat the grill to medium heat. 7. Place the chicken on the grill and cook for about 20 minutes, turing once. 8. Generously brush the chicken with our recipe for BBQ sauce and continue cooking for about 20-25 minutes.
